Decadent Chocolate Chip Banana Bread Recipe

Those of you who know me know I don't eat grains, dairy or sugar.  So no, this recipe is not on my diet.  If you are off gluten, but can still do dairy and sugar, this recipe is even tastier with brown rice flour.

2 sticks (1 cup) butter, softened
2 cup sugar
4 eggs
6 ripe bananas
2 cups flour
2 tsp. baking soda
1 tsp salt

1/2 bag (about 3/4 cup) chocolate chips

Preheat oven to 350.
Cream butter with sugar. Add in eggs and mashed bananas and beat until moderately smooth (there will still be lumps).
Sift together flour with soda and salt (my version of sifting is fluffing with a fork in the measuring cup).  Add flour mixture to the banana and egg mixture.  Stir in chocolate chips.

Pour into two loaf pans (I line the bottom with a half sheet of parchment paper to make them easier to pop out.

Bake for one hour.

Allow to cool completely before you remove from the pan and slice.  Enjoy!!!

  3. This looks really good, Renee! :) Thanks for sharing. I have almost a houseful at home when I get there on Sunday. Maybe I'll give it a whirl. I'm going to try with the brown rice flour. I'm sure that it won't last long. Many hugs,

  4. Sounds yum but cup measurements are a problem for me! How do you measure a cup of butter?

    1. 16 oz. 8 oz in a cup. Does that help? What do you measure in? mLs? The conversion table says one cup = 236.59mL ?? LOL

  6. I am baking this today. We were just talking about doing banana bread yesterday, I've never tried it with chocolate chips But one of the neighbors gave us a welcome to the neighborhood pie, so now I have to reciprocate. lol

Oh, and if Ireland doesn't sell their butter in 1/2 cup sticks, she can use a 2-cup or more measuring cup. Add 1 cup water, and then add butter until the water hits the 2-cup line. If it's the "cup" part that's the problem, in the UK I believe it measures out at 225 grams.

  7. thanks for the recipe. I would like to try to go sugar, dairy, and gluten free again...or at least sugar free...do you have any favorite recipes you would not mind sharing - I have one great cookie recipe that uses dates, nuts, and banana and oats that the kids and I enjoy, but would like to find more...as I have a sweet tooth and I love to bake... :-) I can email you if that is easier... thanks... :-) Terps
