Those of you who know me know I don't eat grains, dairy or sugar. So no, this recipe is not on my diet. If you are off gluten, but can still do dairy and sugar, this recipe is even tastier with brown rice flour.
2 sticks (1 cup) butter, softened
2 cup sugar
6 ripe bananas
2 cups flour
2 tsp. baking soda
1 tsp salt
1/2 bag (about 3/4 cup) chocolate chips
Preheat oven to 350.
Cream butter with sugar. Add in eggs and mashed bananas and beat until moderately smooth (there will still be lumps).
Sift together flour with soda and salt (my version of sifting is fluffing with a fork in the measuring cup). Add flour mixture to the banana and egg mixture. Stir in chocolate chips.
Pour into two loaf pans (I line the bottom with a half sheet of parchment paper to make them easier to pop out.
Bake for one hour.
Allow to cool completely before you remove from the pan and slice. Enjoy!!!
